Weyermann Dark Wheat Malt is a kiln-darkened specialty wheat malt that brings toasted bread, honey, toffee, and light caramel character to wheat-forward and specialty beer styles. Falling in the 6–8° Lovibond range, it adds warm medium color and a rich, complex aroma that lifts the malt profile of any recipe it joins.
This malt shines in Dunkelweizen, Dunkel, and dark wheat-forward styles, where its earthy bread and nut notes create depth and warmth without introducing harsh roast character. It also performs beautifully in Brown Ales, Dark Lagers, and specialty hybrids where a touch of baked grain complexity complements malt-forward hops.
Dark Wheat Malt contributes slight color enhancement alongside a satisfying aroma amplification and an earthy, bready malt taste. Its wheat base offers naturally higher protein content, supporting body and foam retention while the roasting process layers on the flavor complexity that base wheat malts cannot provide on their own.
For brewers looking to add dimension to wheat-based recipes or build deeper malt character in dark lagers and specialty ales, Weyermann Dark Wheat Malt is a compelling and versatile specialty grain.
